In oatmeal raisin cookies always prefer lighter whole-wheat pastry flour when you prepare delicate recipes. Slash the amount of sugar to half or you can also add a sweetener like agave nectar, in place of brown sugar which you can use in smaller amounts which will help in maintaining the same flavor.
Ingredients:
- ¾ cup canola oil
- 2 tsp pure vanilla extract
- 2 cups flaked oats
- 2 eggs, lightly beaten
- 1 cup honey or agave nectar
- ½ cup powdered fat-free milk
- 1½ cups wheat germ
- ¾ cup whole-wheat pastry flour
- ½ cup toasted chopped walnuts
- ½ cup raisins
Preparation Method:
- The initial step is to preheat oven to 350°F.
- With the help of parchment paper or silicone baking sheets line two large baking sheets.
- Next step would be to mix the canola oil, lightly beaten eggs, honey, chopped walnuts, rolled oats, vanilla extract, raisins and wheat germ together in a large bowl.
- Sift both flour and powdered milk together and keep it aside.
- Now you need to stir the dry ingredients into the wet ingredients up till well-combined.
- Scoop spoonfuls of the prepared cookie dough and spread onto the prepared baking sheets.
- Bake the cookies for 10-12 minutes or until dry around the edges.
- Finally cool on a wire rack and store oatmeal raisin cookies in an airtight container in the refrigerator.
