These quick, healthy, fresh and tasty avocado tacos are a great choice for a diabetic patient and it is considered a light meal.

Ingredients:
- Avocado – 1 ripe (peeled and seeded)
- Onion – 1 medium (sliced into thin strips)
- Green peppers – 2 large (sliced)
- Red peppers – 2 large (sliced)
- Cilantro – 1 cup (finely chopped)
- Tomato salsa – 1 ½ cups (Ingredients given below)
- Tortillas – 12
- Vegetable oil cooking spray
Tomato salsa
Ingredients:
- Tomatoes – 1 cup (diced)
- Onions – 1/3 cup (diced)
- Garlic – ½ clove (minced)
- Cilantro – 2 teaspoon
- Lime juice – ½ teaspoon
- Jalapeno peppers – 1/3 teaspoon (chopped)
- Cumin – pinch
Preparation Method:
- Mix all tomato salsa ingredients and keep the freshly prepared salsa in refrigerator.
- Now take the skillet and coat it with vegetable cooking spray.
- Sauté onions, green and red peppers lightly.
- Cut avocado into 12 equal slices
- Heat tortillas in oven and fill them with onions, peppers, avocado slices and refrigerated salsa.
- Fold the stuffed in tortillas, top them up with cilantro and serve.
